Looks like I forgot to mention what seemed most obvious only to myself:
grub is only on the serial console. Because it is an EFI application, it
relies on whichever interfaces the firmware has implemented. As far as I
know U-Boot does not implement the display interface, and I am not if
anybody seriously considers doing so.
So for now grub menu is just a brick unless you are using the serial
console.
Distros can still decide to use extlinux.conf (interpreted by u-boot),
or their own boot-script.
