Well I did have a quick go after all - but unfortunately it appears not 
to be straightforward.  After "apt-get install hildon-desktop", putting:

hildon-desktop &
exec matchbox-window-manager

instead of the matchbox desktop and panel, and restarting X, I get:

(1) a desktop with no text and no obvious UI controls on it, and

(2) lots of errors in .xsession-errors - see below.

Do you happen to know if there's something else I should be installing 
or doing?
